I {heart} fall!

I am completely in love with the weather we have been having over the past few weeks. It isn't hot, it isn't cold...it is just perfect! We have been enjoying the cooler evenings outside, our day trips are nice and comfortable, we are getting to pull out our warmer clothes, there are yummy pumpkin treats all over the place, we are getting to have a bonfire (aka...make smores!) and hay ride for church at our house next week, AND we will get to have a real life fire in our new fireplace soon!! Honestly, could it get any better?

Well, yes.it.can....we get to spend it with two of the most cuddly babies on the planet! :)

Here is a super sweet picture of Landry and her Uncle Drew last Sunday during family pictures. It was so pretty outside, so Landry decided to take a little rest on Drew's chest. It was really sweet because she just went over and crawled on him all on her own. She was ready to relax too! :)

Thankful Thursday...

Hi! I have been feeling crazy the past several days because we have not had a computer. We got a yucky virus where we couldn't even get the computer to turn on, and I honestly didn't realize how much I use it during the day! Looking up recipes, checking emails, BLOG UPDATES, uploading and editing pictures...I was really going nuts!
Micah was finally able to get the virus off (for now), and I am SO thankful today for a computer that works. I am also thankful that all my pictures are still here. I was so worried that we were going to lose the newest pictures that I uploaded. I back up onto an external device, but not everyday!
So, we are back in business. I have lots of blog updates coming soon. Here is a sneak peek of what will be coming over the next week or so...

8 weeks!

This chunky little nugget is 8 weeks old already! Seriously, where has the time gone!?
Collier is such a sweet baby and content almost all the time. We have been fighting with what might be a little collic in the evenings between 6 and 8ish, but we started giving him "gripe water," and that seems to help. He nurses like a champ, and will not take a pacifier to save his life. My name is Lindsey, and I AM A PACIFIER! :) He is starting to really pay attention to what is going on around him, and he will follow us with his eyes all the way across the room. He is tough as nails and can handle being "loved" by his big sister without even making a peep.

Here are a few pictures from yesterday morning. Yes, that is Landry's hand tickling his feet to try to make him smile for the picture. :) She kept switching between "Ticky, ticky, ticky!" and "Cheeeeeze!" So sweet!


At his doctor's appointment yesterday, he was in the 70ish percentile for both height and weight. He is a big, healthy boy! Collier is a joy and blessing to our lives. Such a sweet little thing that we could not imagine our family without!

Make this...seriously!

Yesterday I made one of my favorite fall side dishes at lunch, and I thought I should share since it is SO easy and SO yummy! Micah loves it, Landry loves it...besides being totally delish, it is cheap and healthy too!
I think I originally found this recipe in Southern Living Magazine a few years ago, but it has been tweaked a little since then. I think it may have had walnuts tossed in the original recipe, so that might be something different to try too!

Roasted Sweet Potatoes with Spinach
You will need:
2-3 Sweet Potatoes
1 (or half) Red onion
A few handfuls of baby spinach
Olive Oil
Salt and Pepper

Preheat oven to 375. Cut up sweet potatoes and red onion and place on baking sheet. Toss liberally with olive oil and sprinkle with salt and pepper. Roast for 35-45 minutes, tossing halfway through.

Put a few handfuls of spinach in a large bowl (big enough to add the potatoes in the next step!). We use extra spinach because we like it!!

After potatoes roast, pull them out of the oven and pour directly over spinach.

Toss lightly, and then place a plate over the top for the spinach to wilt. Give it a few minutes, and then you are ready to serve!

We ate this yesterday with smoked turkey sausage and a little bread. It was a simple, filling, and healthy lunch. Much better than frozen pizza which Micah gets a lot of the time! :)

Landry's first haircut!!

Landry had her first haircut earlier this week! It was really more like a tiny little trim, but it still counts! We even picked up tiny little pieces to keep in her baby book...even though I think that is kinda creepy. :)
She did really great during her appointment. I bought her a princess outfit at Target before we went, and we let her play with part of it while she was in the chair. I think that helped her stay distracted!

She seemed to get a little sad right before we went back. It was either because her daddy made her sit down OR she just knew what was coming. :)






We ended up having about 3/4 of an inch cut off in the back and everything trimmed and evened out in the front. We can still get her hair in pigtails, but barely! It was still a little wet in these "after" pictures, so I will get some other shots later. We think it looks a lot better, and it even curls under like a little bob! Goodbye Mr. Mullet, I am sure you will be back before the next haircut! :)

Back to reality...and we like it!

We are home and glad to start getting back into our normal routine. We had such a great time on vacation spending time with family, but as Micah described traveling with two little ones..."It is not a vacation with babies. Everything is just the exact same, but 10 times harder because you are in a new place." :) We were blessed to be able to spend the week with Gigi and Papa-D, and Landry just LOVES her cousins, but it is a relief to be home. We all slept wonderfully last night back in our own beds! Already looking forward to another beach vacation next year though!

We left Destin on Friday around lunch time and traveled a little over halfway home. We stopped over in Eastern Arkansas for a family wedding on Saturday morning and made it home about 7:00 last night. The kids really did great in the car, so it was nice for Micah and I to have some time just to chat. Friday was his 31st birthday (Happy Birthday Love!!), and we got to spend it in the car for about 8 hours. :) He did get to spend a whole rainy day in Destin shopping for new hunting goodies, and we traveled back home with a new bow, case, arrows, and a lot of junk that I don't know what it is. Don't think for a second that he was mistreated for his b-day!

Landry had been waking up in the middle of the night almost every night while we were on vacation. We would have to go get her, calm her down, and put her back to bed. We were a little worried that getting home she would be in the habit of getting up, but she slept 12 hours straight last night! So proud of our big girl!
That's it for the vacation posts! I will be updating about each of the kids soon and what is going on with them. We have Collier's 8 week appointment on Friday, and Landry will be turing 18 months in about 2 weeks. SO crazy how fast the time is flying! Just a little teaser for you....we weighed our little man last night when we got home, and he is up to 15 pounds!! Such a little chunky bundle! :)
